Ingredients (Serves: 4-5):

To prepare this flavorful Veg Soup, you’ll need the following:

  • 1 tbsp oil
  • 1 tsp ginger-garlic paste
  • 1 cup carrots (diced)
  • 1 cup beans (chopped)
  • 1 cup cabbage (shredded)
  • ½ cup peas
  • ½ cup corn kernels
  • 4 cups vegetable stock or water
  • Salt (to taste)
  • Black pepper powder (to taste)
  • 2 tsp cornflour (optional, for thickening)
  • Fresh coriander leaves (for garnish)

Preparation Time: 30-40 minutes

Veg Soup-Making Process with the List of Ingredients:

STEP 1: Saute the Vegetables

  • Pour a tablespoon of oil into a big pan and heat. Put ginger-garlic paste and fry for a few seconds until it gives out some aroma. 
  • Use carrots, beans, cabbage, peas, and corn kernels. Fry for 4-5 minutes over a medium flame just till the vegetables are half cooked.

STEP 2: Add the Stock

  • Add vegetable stock or plain water and let this cook until the wine boils up. 
  • Now add salt as well as black pepper powder according to the taste buds. 
  • Reduce the heat to medium-low in order to let the stew cook for 10-12 minutes.

STEP 3: Thicken the Soup (Optional)

  • In case you want the soup to be thicker then add 2 teaspoons of cornflour in water and mix it into the soup. 
  • Mix it softly in order to prevent the formation of lumps and allow it to simmer for an additional five minutes.

STEP 4: Final Touch

  • When the soup is of the right thickness let it simmer off the heat.
  •  You may sprinkle the food with freshly chopped coriander leaves for extra taste.

STEP 5: Serve

Prepare and bring to the table in bowls with a side of toasted bread or breadsticks to make it a meal.
