Ultimate Veg Biryani Recipe: Restaurant-Style delightful Flavor at Home!

When you wish to make your family happy or surprise your guests, the veg biryani recipe always comes out as the hero.

Ingredients (Serves: 4-5)

To prepare this delicious and aromatic veg biryani, you’ll need:

For the Rice:

  • 2 cups basmati rice (soaked for 30 minutes)
  • 4-5 cups water
  • 1 bay leaf
  • 3-4 green cardamoms
  • 4-5 cloves
  • 1 cinnamon stick

For the Vegetables:

  • 2 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 medium onion (sliced)
  • 1 cup carrots (diced)
  • 1 cup beans (chopped)
  • ½ cup peas
  • ½ cup cauliflower florets
  • 1 cup yogurt (curd)
  • 2 tsp ginger-garlic paste

For the Spices:

  • 1 tsp turmeric powder
  • 2 tsp garam masala
  • 1 tsp red chili powder
  • Salt (to taste)

For Garnishing:

  • A pinch of saffron soaked in warm milk
  • 2 tbsp fried onions
  • Fresh mint and coriander leaves

Preparation Time:

  • 40-50 minutes

step by step process of making Veg Biryani:

Step 1: Cooking the Rice

  • Put water in a big pot, and bring to a boil with bay leaf, cardamom, cloves, Cinnamon, and salt.
  • Parboil basmati rice until 70% done; this means that it will be slightly crunchy. Drain and set aside.

Step 2: Preparing the Vegetables

  • In a large pan heat oil or ghee and when it splutters add cumin seeds. After sputtering add sliced onion for a tasty golden brown.
  • Crumble the ginger-garlic paste and cook until you get a pleasant smell.
  • Stir in the vegetables and cook for an additional 5-6 minutes. Now add the turmeric powder, chili powder, garam masala, and salt.
  • Add yogurt and cook the vegetables on medium heat until they are soft just on the contrary to squashed.

Step 3: Layering the Biryani

  • In a heavy-bottomed pot, start layering:

First, a layer of cooked rice.

  • After that, the spiced vegetables layer is placed.

Continue until all the rice and vegetables have been employed.

  • Sprinkle saffron-infused milk and crispy onions on the top.

Step 4: Dum Cooking

  • Use a fitting lid or dough to cover it to allow the steam inside to remain if you are practicing dum cooking.
  • Simmer on low heat for about half an hour.

Serving Suggestions

Serve veg biryani hot with:

  • Raita: A milk-based cold accompaniment, raita made from curd and yogurt mixed with cucumber Or boondi.
  • Papad: Tasty crisp papadum for those, whose teeth love firm crunch.
  • Pickles: Add a kick with Indian pickles always embraced to make the preparation of the meal more interesting.
  • Finish it off with some chopped fresh coriander and lemon wedge.

1. Use Aromatic Rice: Basmati rice must be used for the achievement of proper texture and the right aroma.

2. Fresh Ingredients: Select fresh vegetables and approve coriander instead of powder to get the real taste of spices.

3. Don’t Overcook the Rice: It is important to make the rice a little undercooked so that when you start piling one on top of the other they are not soft.
