sattu ka paratha and roasted tomato chutney- a perfect winter meal

One of the most enjoyable stories with a side dish of real Welsh history Sattu Ka Paratha is yet another marvelous invention of the kitchen of Bihar and Uttar Pradesh which belongs to the north Indian region.

A simple preparation of wheat flour dough filled with mouthwatering roasted gram flour or ‘Sattu’ has always been a farmer’s delight because of the nutritional value it holds along with the energy one needs on the farm. Served with a roasted tomato chutney, it gives the recipes an earthy tang test, to the meals. This dish is very common in winter as the weather starts giving the cold vibes and our tummy demands something warm and yummy.

Ingredients:

For Sattu Ka Paratha: 

For Dough 

  • Whole wheat flour: 500 gm 
  • Carom seeds(ajwain):1 tsp
  • Kalonji seeds(mangrela): 1 tsp
  • Water: 2 cup (or as needed) 
  • Salt: 1 tsp(as per your taste)

For Stuffing 

  • Sattu (roasted gram flour): 150 gm
  • garlic paste: 1 tbsp
  • Green chili paste: 1 tbsp 
  • Lemon juice: 1 tbsp 
  • Mustard oil: 1 tbsp 
  • Pickle: 1 small 
  • Coriander leaves: A handful, finely chopped 
  • Salt: As per taste 
  • Ajwain (carom seeds): ½ tsp 
  • Water: ¼ cup

For Roasted Tomato Chutney: 

  • Roasted tomatoes: 4 medium, 
  • chopped Onion: 2 small, finely chopped 
  • Green chilies: 2-3 
  • Garlic: 2-3 cloves 
  • Mustard oil: 1 tsp 
  • Salt: As per taste 
  • Coriander leaves: A handful for garnish

Preparation Time:

  • Sattu Ka Paratha: 30 minutes 
  • Roasted Tomato Chutney: 10 minutes 
  • Total: 40 minutes 
  • Serves 3-4 people 

Step-by-Step Recipe:

Sattu Ka Paratha:

Step 1:Prepare the Dough

Now in a bowl add whole wheat flour, salt, ajwain, and mangrela together. Slowly incorporate water and work into a smooth elastic dough. After that, pour some water, cover it with a damp cloth, and let it rest for 15 minutes. 

Step 2:Prepare the Stuffing 

In another bowl, Mix sattu, finely chopped onion, green chilies, garlic paste, ajwain, mustard oil, mashed pickle, salt, finely chopped coriander leaves, and lemon juice. Mix well. If the mixture appears too dry, pour a little water into the mixture but ensure it remains crumbly as it’ll be stuffed. 

Step 3:Stuff the Paratha 

Roll the dough out into sections and portion it out to the same size. Form one ball into a small circle. Put 1-2 tbsp of sattu mixture and bring all the sides together and close it properly, so that the sattu mixture would not come out.

Step 4: Flatten the paratha

After stuffing and rounding it into a small circle, place it on a flat surface, Use a rolling pin to gently roll it out into a round roti like structure.

Step 5: Cook the Paratha

Heat the tawa on medium-low flame. Put the rolled paratha and cook for 1-2 minutes on the tawa. then turn and fry the other side frequently adding ghee or oil to get a nice brownish color.

Roasted Tomato Chutney 

Step 1:Roast the tomatoes:

Put the tomatoes on gas openly in medium flame for a few minutes until they turn a little blackish color. after this, peel the tomatoes.

Step 2:mix-mix-mix:

Take a bowl and add finely chopped onion, green chili, coriander leaves, salt(as per your taste), and a teaspoon of oil.

Tips for Sattu Ka Paratha 

  1. The sattu mixture must be a fine one, not too wet but not dry either so it falls apart. Fold them gently so the stuffing does not come out from the parathas. 
  2. one should always cook on a moderate heat to allow equal cooking and minimize burning. 
  3. While roasting the tomatoes, make sure it doesn’t burn too much.

  • Sattu is a cooling food, during the hot summer days you can drink sattu by mixing it with water, onion, green chili, and salt.

Life lesson: just like sattu ka paratha , the outer facing is done with normal wheat flour but  inside,  it is packed with vitamins and minerals. In the same way, you are more valuable and worthy from inside than the outside.
