Malai Kofta Recipe: A Creamy, Delicious Delight

Malai Kofta

Malai Kofta is a rich and indulgent Indian dish that combines soft, melt-in-your-mouth koftas with a creamy, flavorful curry. It’s perfect for special occasions or when you want to treat yourself to something extra delicious. Let’s dive into how you can easily make this at home!

Ingredients : 

For the Koftas :

  • 2 medium-sized potatoes (boiled and mashed)
  • 100g paneer (crumbled)
  • 2 tbsp cornflour
  • 2 tbsp fresh cream
  • Salt
  • 1/4 tsp black pepper powder
  • A pinch of cardamom powder
  • Oil

For the Gravy (Curry):

  • 2 tbsp oil or ghee
  • 1 large onion (finely chopped)
  • 1 tomato (pureed)
  • 1/2 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt 
  • 1/2 cup fresh cream
  • 1/4 cup cashew nuts (soaked)
  • Fresh coriander (garnish)

Step-by-step guide:

Step 1: Prepare the Koftas

  • Mix mashed potatoes with crumbled paneer and maida along with cream, salt, black pepper, and cardamom powder in a bowl. Stir together until everything becomes uniform.
  • Shape divides portions of the mixture into round balls that measure the size of a golf ball. Add one teaspoon of cream and small slices of dry fruit, for example, cashews or raisins when you want to stuff your kofta balls.
  • Heat oil in a frying pan over medium heat. Place koftas into hot oil then bake until they obtain a flaky golden crust uniformly across all sides.

Step 2: Make the Gravy

  • Take a pan, heat oil, or ghee. Fry the chopped onions until they get a golden brown color.
  • Add the mixture of ginger-garlic paste for one minute under heat. Mix the pureed tomatoes with turmeric powder, red chili powder, and garam masala while continuing to stir until oil separation occurs. The sauce needs to be cooked until oil breaks away from the complex spice mixture.
  • During curry preparation blend the cashews after soaking them with small amounts of water until they create a perfect paste.
  • Stir the mixture after adding newly added fresh cream. Continued cooking for 2-3 minutes completes the combination of all ingredients. Add salt according to your preference then adjust the measurements.

Step 3: Combine the Koftas and Gravy

  • Add fried kofta pieces softly to hot gravy. Cook for one to two minutes and simply keep them immersed in the sauce. 
  • Garnish with fresh coriander leaves.

Tips for a perfect malai kofta : 

  • Don’t over-fry the koftas, they should be crispy on the outside but soft on the inside.
  • You can add a little more cream to the gravy.
  • To make it healthier, you can bake the koftas instead of frying them.
