Ingredients (Serving 4-5)
- 4-5 pieces medium size potatoes (partly boiled and peeled).
- 2 tablespoons oil (you may use vegetable oil or mustard oil).
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 10-12 curry leaves
- 2 green chillies slit or chopped
- 1 inch ginger ( peeled and grated or finely chopped)
- 1 medium onion (thinly sliced)
- 1 medium tomato (chopped, optional)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chilies (depending on the desire spice level)
- 1 teaspoon coriander powder
- Salt to taste
- 2-3 tablespoons fresh coriander leaves (chopped)
- 1/2 lemon (juice)
Preparation Time: 40 Minutes
Step-by-step instructions to prepare Aloo Masala:
Step 1: Prepare the Potatoes
Just cook the potatoes till they are partially tender, but not fully soft. You will then allow them cool before peeling and cutting them into medium sized pieces.
Step 2: Heat Spices
Heal oil on a frying pan over a ringed fire. Then add mustard seeds and allow them to pop. Next sauté cumin seeds and curry leaves and turn off the flame immediately after they start to splutter or pop.
Step 3: Sauté Aromatics
Next add green chilies and grated ginger and the sliced onions. If you are using onion or garlic, wait until it becomes tender or the onions are lightly browned. If using tomatoes add at this stage and sauté until they are soft.
Step 4: Add Spices
Add turmeric and red chili, and coriander powders. Stir to blend all the spices and come up with spice base.
Step 5: Cook Potatoes
Mix in the diced potatoes to the pan. Stir slowly to ensure that the potatoes have been covered with the spice powders adjoined. Be careful not to mash them.
Step 6: Simmer and Adjust
Finally, season with pepper and salt then add a little water if the mixture it too dry. Place and simmer for 3-4 minutes with the lid, to let the ingredients mix well.
Step 7: Finish with Garnish
Remove from heat , garnish with chopped coriander leaves and finally add lemon juice on the preparation.
Tips
- Semi-Boil Potatoes Correctly: Be sure that the potatoes are quite cooked but remain a bit hard to soak in spices. Water boiling on potatoes for too long makes the potatoes mealy.
- Spice Balance: The heat will depend on the green chilies and hence while grinding adjust the green chilies and red chilies to your preferred heat. Don’t add spices at once, instead, keep sampling the meals to know the right amount to add.
- Don’t Overcrowd the Pan: Never overcrowd the pan because this will make the potatoes not be coated well with spices. Do not mash during stirring as this may spoil the shape of the product.
- Use Fresh Curry Leaves: If the curry leaves are fresh they add a significant boost to the flavor of the curry. In case these are not available, dried ones should preferably be used instead.
- Finish with Lemon and Coriander: The food should be topped with fresh coriander leaves and this should be followed by a squeeze of lemon juice to give it a balanced flavor.
Serving Suggestion
- With Rice: Best served with steamed basmati rice or jeera rice to compliment the dish well.
